Marcos Salamamca

All Iberian shoulders (paletas) from Marcos Salamanca are created from meticulously selected Ibérico pigs, which allows them to control the pureness of the breed and guarantees the final result. The acorn fed (bellota) paletas allowed to graze in rich pastureland on the Portuguese oak, cork oak, and Holm oak acorns.

All hams from Marcos Salamanca are made following the traditional recipe that has been practiced for years in this beautiful corner of the “Sierra de Francia”. The process begins with a careful selection of the animals, all having passed the strictest controls ensuring purity of race and lineage. In the drying houses, each of the pieces is outlined manually to ensure a perfect cure of the hams. The hams are reviewed daily by Marcos´ ham master, up to the point where the hams reach the minimum curing time (17 to 36 months).
